I love to cook. So, on this page I would like to share some of my recipes that are loved by my family and friends. Some passed to me as family recipes, some came from friends, some adapted & altered from books and some of my own invention. I would like to start with the most favorite pie recipe in our household. Simple & good.

I will be adding more recipes later on. Let me know what you think & Bon Appétit!

ALL-BERRY PIE

This pie is simple and delicious, loved by my family and friends. The crust is easy to make and can be prepared days in advance and stored in a freezer. The filling is even easier, any berries will do! Simply combine them with sugar and a bit of a liquor and you are set to go!

Crust

1 1/2 cups of sifted flour
1 stick of cold unsalted butter
1 fresh egg; 1/4 cup of cold water
1 teaspoon of sugar
1/4 teaspoon of salt
2 teaspoons of lemon zest

Filling

3 1/2 cups of any berries 3/4 cup of sugar
1 shot glass of a good liquor

Additional flour and two egg yokes.

Directions

Place flour into a mixing bowl. Shred cold butter into the flour. Add sugar and salt. Mix dry ingredients with butter with your hands until even mixture. Combine water and bitten egg in a cup and pour it into the mixing bowl (add more flour if needed). Add lemon zest. Mix and work the dough until it’s firm and smooth. Make a dome shape, cover it in a plastic wrap and refrigerate for at least 30 min.

Preheat oven to 350 degrease. Mix berries with liquor and sugar until each berry is evenly covered. Set aside. Prepare stoneware dish by rubbing a small amount of butter inside and sprinkle with flour. Roll the crust and place it into a dish. Poke holes on the bottom and sides with a fork. Fill it with berry mixture and shape the edges. With leftover dough cut leaves and flowers and arrange them on top of your pie. Whisk 2 egg yolks and generously brush all visible dough parts with this mixture. Bake for 44 minuets. Cool off and enjoy!

Note: please feel free to improvise - use what you have, add what you want. The whole point is just to enjoy the process & the outcome. Bon Appétit!
